Spinach Basil and Honey Pizza
Let me just say, I was skeptical at first glance. This is a recipe I originally saw in a Pampered Chef Season’s Best book. But after much thought and “playing” I adapted it to my own tastes and preferences. And it was spectacular! This spinach basil and honey pizza was one of the most fun and tasty pizzas I have made in a long time! I made two pizzas to feed a family of four with a side salad. And there was more than enough for everyone! I hope you enjoy it as much as we do!
Spinach, Basil & Honey Pizza
Ingredients
- 2 packages Pillsbury All Natural Pizza Crust Or you can make your own from scratch!
- 1/4 cup Cornmeal for Dusting
- 1/2 cup Honey
- 1 1/2 cups Chopped Baby Spinach
- 1 tbsp Minced Roasted Garlic
- 1 1/2 cups Freshly Grated Mozzarella Cheese You can also purchase shredded cheese in a bag
- 3/4 cup Ricotta Cheese Whole or part skin work great
- 1/2 cup Chopped Basil Leaves, I cut them into strips
- 1/4 cup Chopped Sweet or Purple Onion
Instructions
- Preheat over to 400 degrees while preparing the pizzas
- Mix the chopped spinach, garlic, shredded cheese, ricotta cheese, onion, basil strips and half the honey together in a bowl. Be sure to mix it so everything is evenly distributed. Then set aside.
- Spread a thin layer of cornmeal on counter or clean cutting board. You can use a powdered sugar shaker to do this or spread with your hands. Use a baker's roller to roll the dough into a 16"x 8" rectangle. You can also make it round, I just like the look of the rectangle pizza. Be sure to do a thin layer of cornmeal on both sides of each crust.
- Place your pizza crust on a greased baking pan or I used a cooking stone. Which made the crust nice and crispy!
- Take half the honey and do a serpentine design on your crust. Do not spread it evenly over the crust. Everything is to taste, however, the honey will make your crust soggy if you use too much.
- Take half the pizza mixture from the bowl and evenly spread it across each of your pizza crusts. Bake for 17-22 minutes. Then enjoy!
