I am always looking for ways to make dinner easy and tasty. Mexican cuisine is a favorite in my family so I decided to try my hand at a Taco Cornbread Casserole. This is an easy casserole dish that you can make on the fly! It is easy and ready in about an hour!
Additional Variations to Try
Here are some additional variations you can try in your Taco Cornbread Casserole!
Add a whole can of corn or chilies (drained) to your cornbread mix to give it a different flair. Spice it up with Cayenne Pepper if you want to add a little fire! There are so many way to make this recipe your own and personalize it to you and your family’s tastes!
This is also a great recipe that can be easily reduced for a family of four! Just cut your ingredients in half and bake in a 9×9 inch baking dish. Also reduce your baking time to 20-25 minutes. That is how I make it for just my hubby and I! It always comes out delish!
I personally love putting my own “spin” on recipes and creating new dishes for my family to try! It is the best way to “hone” your cooking skills and get creative!
Taco Bake Casserole
Ingredients
- 2 lbs Ground Beef *cooked with fat drained
- 2 envelopes Taco Seasoning *use your favorite brand
- 2 cans Fire Roasted Diced Tomatoes
- 1/2 cup Water
- 2 packages Cornbread Mix
- 1 can Whole Kernel Corn, drained
- 2 cups Mexican Shredded Cheese
- Sour Cream for garnish
- Shredded Lettuce for garnish
- Sliced Avacado or guacamole for garnish
Instructions
- Preheat oven in to 400 degrees.
- Over medium heat, cook ground beef until no longer pink. Break into crumbles and drain fat. Approximately 8-10 minutes. Add taco seasoning, chilies, corn kernels, tomatoes, shredded cheese and water. Stir until combined. Remove from heat.
- Make cornbread according to packaging. Pour half the cornbread mixture in greased 9x13 inch baking dish.
- Pour the ground beef mixture over the cornbread mixture. Take remaining cornbread mixture and pour around the edges of the baking dish. Beef mixture should be visible in the middle.
- Sprinkle with 1 cup of shredded cheese across the top. Bake for 45-50 minutes.
- Garnish with additional shredded cheese, sour cream, shredded lettuce and sliced avocado.
- REMEMBER: if you decided to do a half size use a 9x9 inch baking dish and reduce baking time to 20-25minutes.
