Preheat oven in to 400 degrees.
Over medium heat, cook ground beef until no longer pink. Break into crumbles and drain fat. Approximately 8-10 minutes. Add taco seasoning, chilies, corn kernels, tomatoes, shredded cheese and water. Stir until combined. Remove from heat.
Make cornbread according to packaging. Pour half the cornbread mixture in greased 9x13 inch baking dish.
Pour the ground beef mixture over the cornbread mixture. Take remaining cornbread mixture and pour around the edges of the baking dish. Beef mixture should be visible in the middle.
Sprinkle with 1 cup of shredded cheese across the top. Bake for 45-50 minutes.
Garnish with additional shredded cheese, sour cream, shredded lettuce and sliced avocado.
REMEMBER: if you decided to do a half size use a 9x9 inch baking dish and reduce baking time to 20-25minutes.
