Taco Bake Casserole

This is an easy meal that feeds your entire family in less than an hour! An easy Mexican dish your family will love!

Ingredients

  • 2 lbs Ground Beef *cooked with fat drained
  • 2 envelopes Taco Seasoning *use your favorite brand
  • 2 cans Fire Roasted Diced Tomatoes
  • 1/2 cup Water
  • 2 packages Cornbread Mix
  • 1 can Whole Kernel Corn, drained
  • 2 cups Mexican Shredded Cheese
  • Sour Cream for garnish
  • Shredded Lettuce for garnish
  • Sliced Avacado or guacamole for garnish

Instructions

  • Preheat oven in to 400 degrees.
  • Over medium heat, cook ground beef until no longer pink. Break into crumbles and drain fat. Approximately 8-10 minutes. Add taco seasoning, chilies, corn kernels, tomatoes, shredded cheese and water. Stir until combined. Remove from heat.
  • Make cornbread according to packaging. Pour half the cornbread mixture in greased 9x13 inch baking dish.
  • Pour the ground beef mixture over the cornbread mixture. Take remaining cornbread mixture and pour around the edges of the baking dish. Beef mixture should be visible in the middle.
  • Sprinkle with 1 cup of shredded cheese across the top. Bake for 45-50 minutes.
  • Garnish with additional shredded cheese, sour cream, shredded lettuce and sliced avocado.
  • REMEMBER: if you decided to do a half size use a 9x9 inch baking dish and reduce baking time to 20-25minutes.
