Magnolia Table’s Mexican Party (Taco) Salad Recipe
I love Chip and Joanna Gaines. I aspire to be like them. Only kidding, but I have a healthy respect for the life they have created and lets face it, they are entertaining as hell! And talented too. Several months ago I purchased the Magnolia Table recipe book, Volume 2. The first recipe I shared from this book was the Zucchini Squash Strata! And it was FANTASTIC! Now I am sharing another recipe, Mexican Party (Taco) Salad Recipe! It was easy, a must for me, and delicious!
Variations
I made some variations to this recipe. Personally like black beans more than kidney beans. I also love corn, so I added that too. And I skipped the cheese. I like cheese, it doesn’t always like me. But I will be sure to let you know what I did differently compared to the exact recipe.
Magnolia Table's Mexican Party Salad Recipe
Ingredients
- 1 tsp Olive Oil
- 1 lb Ground Beef
- 2 tsp Ground Cumin
- 1 tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tsp Black Pepper
- 1 head Iceberg Lettuce, Chopped *I used a bag of spring mix lettuce
- 3/4 cup Halved Grape Tomatoes
- 1 15 oz can Kidney Beans rinsed and drained *I used Black Beans, drained and rinsed
- 1 15 oz can Canned Corn, drained *this was not in the original recipe
- 1/2 cup Shredded Cheddar Cheese *I skipped the cheese!
- 1/4 cup Chopped Red Onion *this was not in the original recipe
- 1 Avocado, pitted and diced
- 1/4 cup Fresh Cilantro Leaves
- 1 cup Broken Tortilla Chips *use your favorite
- 1 bottle French Salad Dressing
- 1 Lime, quartered *optional
Instructions
- In a large skillet, heat olive oil over medium heat. Add ground beef and break up with a wooden spoon. Sprinkle cumin, chili powder, garlic powder and ground pepper evenly over the ground beef and continue cooking until there is no pink and cooked through. Approximately 5-7 minutes.
- Remove from heat and drain off any grease. Set aside.
- Place the spring mix lettuce on the bottom of each bowl. Then divided the ground beef among the 4 bowls. Add the corn and black beans on either side. Sprinkle the fresh cilantro and red onion on cop of the ground beef. Place the chopped avocado to the side. Finish off your salad with the crumbled Tortilla chips! Place a bowl of the dressing on the table so everyone can take the amount they enjoy!
- **I made individual bowls, but you can certainly create one big bowl and everyone digs in!
Conclusion
Yes, I did change quite a few of the ingredients to accommodate our tastes, however, that is what is great about knowing what you like. And how to modify recipes to your liking. I hope you enjoy this recipe as much as my hubby and I did! And I can’t wait to have the leftovers from this Mexican Party (Taco) Salad Recipe for lunch tomorrow!
