Magnolia Table's Mexican Party Salad Recipe

This is a fun and easy recipe that can be ready in under 30 minutes!

Ingredients

  • 1 tsp Olive Oil
  • 1 lb Ground Beef
  • 2 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1 head Iceberg Lettuce, Chopped *I used a bag of spring mix lettuce
  • 3/4 cup Halved Grape Tomatoes
  • 1 15 oz can Kidney Beans rinsed and drained *I used Black Beans, drained and rinsed
  • 1 15 oz can Canned Corn, drained *this was not in the original recipe
  • 1/2 cup Shredded Cheddar Cheese *I skipped the cheese!
  • 1/4 cup Chopped Red Onion *this was not in the original recipe
  • 1 Avocado, pitted and diced
  • 1/4 cup Fresh Cilantro Leaves
  • 1 cup Broken Tortilla Chips *use your favorite
  • 1 bottle French Salad Dressing
  • 1 Lime, quartered *optional

Instructions

  • In a large skillet, heat olive oil over medium heat. Add ground beef and break up with a wooden spoon. Sprinkle cumin, chili powder, garlic powder and ground pepper evenly over the ground beef and continue cooking until there is no pink and cooked through. Approximately 5-7 minutes.

  • Remove from heat and drain off any grease. Set aside.
  • Place the spring mix lettuce on the bottom of each bowl. Then divided the ground beef among the 4 bowls. Add the corn and black beans on either side. Sprinkle the fresh cilantro and red onion on cop of the ground beef. Place the chopped avocado to the side. Finish off your salad with the crumbled Tortilla chips! Place a bowl of the dressing on the table so everyone can take the amount they enjoy!

  • **I made individual bowls, but you can certainly create one big bowl and everyone digs in!
