Tex Mex Chicken Pasta Salad
My family and I love pasta, of all kinds! This particular weekend I wanted to try something a little different, but was relatively healthy. So I came up with a Tex Mex Chicken Pasta Salad that the whole family enjoyed! I used whole wheat pasta, rotisserie chicken and some other fresh ingredients to make a filling meal for either a lunch or dinner entree! Feel free to put your own spin on this yummy variation of pasta salad, with a twist!
Tex Mex Chicken Pasta Salad
Ingredients
- 1 box Whole Wheat Spiral Pasta, cooked and cooled
- 1 can Black Beans (drained and rinsed)
- 1 can Sweet Kernel Corn (drained and rinsed)
- 1/4 cup Fresh Cilantro, chopped
- 20 Cherry Tomatoes, sliced in half
- 1/4 cup Diced Green Onion
- 1 bottle Western Dressing or Catalina Island Dressing
- 3 Cooked Chicken Breast, shredded
- Feta Cheese to Taste
- 1 Avocado
Instructions
- Cook pasta according to package and rinse under cool water. And remember to use an herb stem stripper to get rid of stems quickly and an herb scissors to chop leaves quickly!
- Once your pasta is cooked and rinsed, add the black beans, corn, cilantro, cherry tomatoes, green onion, dressing and shredded chicken. You can purchase a whole cooked chicken fro your local grocery store, if you want to make it easier!
- Mix well and chill.
- This salad is best served chilled. Dice up avocado and sprinkle on top of salad with feta cheese prior to serving!
