Tex Mex Chicken Pasta Salad

This is a yummy pasta salad with chicken, tomatoes and more!  You can use this as either an entree or side dish!  Perfect to take to a barbecue or potluck event!

Ingredients

  • 1 box Whole Wheat Spiral Pasta, cooked and cooled
  • 1 can Black Beans (drained and rinsed)
  • 1 can Sweet Kernel Corn (drained and rinsed)
  • 1/4 cup Fresh Cilantro, chopped
  • 20 Cherry Tomatoes, sliced in half
  • 1/4 cup Diced Green Onion
  • 1 bottle Western Dressing or Catalina Island Dressing
  • 3 Cooked Chicken Breast, shredded
  • Feta Cheese to Taste
  • 1 Avocado

Instructions

  • Cook pasta according to package and rinse under cool water. And remember to use an herb stem stripper to get rid of stems quickly and an herb scissors to chop leaves quickly!
  • Once your pasta is cooked and rinsed, add the black beans, corn, cilantro, cherry tomatoes, green onion, dressing and shredded chicken. You can purchase a whole cooked chicken fro your local grocery store, if you want to make it easier!
  • Mix well and chill. 
  • This salad is best served chilled. Dice up avocado and sprinkle on top of salad with feta cheese prior to serving!
