My daughter made the decision to change her diet to plant based. In support of her I have been trying to help her find recipes to fit her new healthy way of life! As my husband and I are carnivores to the core, she actually shared a recipe with me that she felt we would LOVE and I could add a mild sausage to satisfy our “meat” cravings. The original recipe can be found HERE. It is a Tuscan White Bean Skillet by Nourish and Fete. It was fabulous, of course I changed some ingredient amounts, but it was definitely an easy and delicious recipe. And ready in under 30 minutes!
White Bean Recipes
Cannelloni beans are not something I cook with often. Neither are artichoke hearts. But I definitely enjoyed both and they made this dish a very hearty and filling meal. Enough so that even my husband’s hunger after a long day at work was satisfied!
This is definitely a good recipe which you can make as a vegan meal or you can add sliced sausage for the meat lovers in the family. I used a mild smoked sausage, however, I am sure it would be great with a spicy sausage too! You decide what works best for your family!
Substitutions
The original recipe had kale, I used spinach. Mostly because I like spinach better. But that is just my opinion. The recipe suggests Cannelloni beans, but white kidney beans or navy beans would work just as well! And you can always add meat! Smoked sausage was a wonderful addition!
Tuscan White Bean Skillet
Ingredients
- 1 12 oz. Smoked Kielbasa, sliced *optional
- 1 large Onion, chopped
- 2 14.5 oz cans Cannelloni Beans *Navy Beans or white kidney beans can be used
- 1 14.5 oz can Fire Roasted Diced Tomatoes, do not drain juices
- 1 12 oz jar Marinated Artichoke Hearts, quartered and drained
- 1 8.5 oz jar Julienne Cut Sun Dried Tomatoes, drained
- 2 cups Shredded Spinach
- 1 tbsp Minced Garlic
- 1 tsp Dried Oregano
- 1 tsp Dried Thyme
- Salt and pepper to taste
Instructions
- Place a large skillet over medium heat and add a small amount of olive oil to heat. Place chopped onion, minced garlic and sliced sausage in pan and cook over medium heat for 10 minutes. Stirring frequently.
- Then add beans, tomatoes, sun dried tomatoes, artichokes, seasonings. Cover and cook for another 10 minutes.
- Final step, add the shredded spinach and cover skillet. Once the spinach is wilted, about 5 minutes, mix all the ingredient until well combined! Then serve!

Beans do have benefits, but Cannelloni beans? I don’t use them much and know little about them. This recipe would be a good way to reacquaint myself with them.
