Tuscan White Bean Skillet

This is an extremely easy meal that is ready in under 30 minutes! This is a meal that can be vegan or not!

Ingredients

  • 1 12 oz. Smoked Kielbasa, sliced *optional
  • 1 large Onion, chopped
  • 2 14.5 oz cans Cannelloni Beans *Navy Beans or white kidney beans can be used
  • 1 14.5 oz can Fire Roasted Diced Tomatoes, do not drain juices
  • 1 12 oz jar Marinated Artichoke Hearts, quartered and drained
  • 1 8.5 oz jar Julienne Cut Sun Dried Tomatoes, drained
  • 2 cups Shredded Spinach
  • 1 tbsp Minced Garlic
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • Salt and pepper to taste

Instructions

  • Place a large skillet over medium heat and add a small amount of olive oil to heat. Place chopped onion, minced garlic and sliced sausage in pan and cook over medium heat for 10 minutes. Stirring frequently.
  • Then add beans, tomatoes, sun dried tomatoes, artichokes, seasonings. Cover and cook for another 10 minutes.
  • Final step, add the shredded spinach and cover skillet. Once the spinach is wilted, about 5 minutes, mix all the ingredient until well combined! Then serve!
