Ingredients
112 oz.Smoked Kielbasa, sliced *optional
1largeOnion, chopped
214.5 oz cansCannelloni Beans*Navy Beans or white kidney beans can be used
114.5 oz canFire Roasted Diced Tomatoes, do not drain juices
112 oz jarMarinated Artichoke Hearts, quartered and drained
18.5 oz jarJulienne Cut Sun Dried Tomatoes, drained
2cupsShredded Spinach
1tbspMinced Garlic
1tspDried Oregano
1tspDried Thyme
Salt and pepper to taste
Instructions
Place a large skillet over medium heat and add a small amount of olive oil to heat. Place chopped onion, minced garlic and sliced sausage in pan and cook over medium heat for 10 minutes. Stirring frequently.
Then add beans, tomatoes, sun dried tomatoes, artichokes, seasonings. Cover and cook for another 10 minutes.
Final step, add the shredded spinach and cover skillet. Once the spinach is wilted, about 5 minutes, mix all the ingredient until well combined! Then serve!
