Chicken Bacon Ranch Salad

This is another wonderful recipe from Hungry Girl that I am sharing because it is that good! And easy meal prep recipe or something easy to put together after a long day at work!

Ingredients

  • 2 cups Shredded Lettuce *I used a spring mix
  • 4 oz Cooked and chopped chicken breast *I used a chicken strip, sliced. They are large and lightly breaded from Omaha Steaks.
  • ¼ cup Black Beans, drained
  • ¼ canned Sweet Corn Kernels *you cn also use frozen, thawed
  • ¼ cup Chopped Tomato *I sliced cherry tomatoes in half
  • 1 mini Cucumber, sliced *optional
  • 1 tbsp Precooked Bacon. crumbled
  • 3 tbsp Crumbled Feta Cheese *optional
  • ¼ tsp Ranch Dressing/Dip seasoning mix
  • ½ oz Mashed Avocado *I used about 2 tbsp
  • ½ tsp Chipolte Pepper Sauce *I used Sriracha Sauce

Instructions

  • In a small bowl, mix sour cream and ranch seasoning. Add mashed avocado, Sriracha and 1 tsp of water. Mix until smooth and well blended.
  • Place lettuce in the bottom of a large bowl. Top with chicken, beans, corn and any other remaining ingredients! Top with your homemade zesty ranch dressing or regular ranch dressing and enjoy!
