Baked Feta with Cherry Tomatoes, Chicken and Pasta

This easy pasta recipe is a great alternative to basic pasta! With lots of garlic, basil and feta cheese, you will be sure to have a new family favorite!

Ingredients

  • 12 oz Orecchiette Pasta *cooked and drained
  • 2 Cooked Chicken Breast, chopped
  • 4 tbsp Olive Oil
  • 3 cups Cherry Tomatoes, sliced in half
  • 1 cup Crumbled Feta Cheese
  • 1/4 cup Balsamic Vinaigrette
  • 3 tbsp Minced Garlic
  • 1 cup Fresh Basil, chopped
  • Salt/Pepper, to your preference

Instructions

  • Preheat oven to 400 degrees.
  • Toss the halved tomatoes with 3 tbsp olive oil and crumbled feta. Mix until coated and place in a baking dish. Sprinkle with salt and pepper to your taste. Bake for 30 minutes.
  • Prepare pasta according to package. Drain and set aside. Be sure it does not stick together, when cooking be sure to add a tablespoon of oil!
  • Cook chopped chicken with 1 tbsp olive oil and minced garlic. Stir regularly until chicken is cooked through. 5-10 minutes, depending on the size of the pieces.
  • When tomatoes and feta are done cooking for 30 minutes, turn on broiler (or to 450 degrees) and cook for another 5-10 minutes or until the tomatoes and feta are slightly browned.
  • Combine the pasta, chicken and basil in the baking dish. Mix until thoroughly combined. Drizzle with balsamic vinaigrette and enjoy!
