Breakfast Sandwich with Bacon and Hot Honey

This is an easy recipe sure to impress the most finicky eater!

Ingredients

  • 8 sllices Bacon, about 1/2 lb *I used maple bacon, but feel free to bake with hot honey!
  • 2 tbsp Hot Honey *I just used the generic brand, and it was delish!
  • 1 8 oz Cream Cheese *I used scallion and chive, pre-made
  • 5 Scallions, trimmed and chopped
  • 2 tbsp Finely Chopped Jalapenos
  • Salt and Pepper to taste
  • 4 Everything Bagels, split and toasted *Delsih used sesame bagels
  • 2 tbsp Unsalted Butter
  • 4 large Eggs
  • 4 slices Sharp Cheddar Cheese
  • Hot Sauce for Serving *optional, we did not add hot sauce

Instructions

  • Preheat oven to 400°. Place parchment paper on baking sheet and lay your bacon flat, and not touching.
  • Bake for 15 minutes. Brush with hot honey and continue baking until honey is carmelized and bacon is crispy. We like extra crispy!Transfer to a paper towl lined plate to drain.
  • In a medium bowl combine the cream cheese, scollions and jalapenos. Seaons wioth salt and pepper to taste. I toasted our bagels first, then spread the pre-packed cream cheese spread and sprinkled with jalapenos.
  • In a small to medium bowl, beat eggs until blended. In a medium skillet over medium heat, melt butter until foamy. Add the eggs and I scrambled our eggs. I also used more salt and pepper to taste and added some chopped jalapenos. Cook for about 5 min. You can also do a thin layer of egg too. A little less cooking time for that.
  • Top the eggs with cheese and reduce heat to low and cover. Cook until the cheese is just melted.
  • Divide the eggs and bacon among the 4 bagel halves. Top with a little hor honey (or a lot!) abd hot saucve if you like. Top with the bagel top and enjoy!
