Preheat oven to 400°. Place parchment paper on baking sheet and lay your bacon flat, and not touching.
Bake for 15 minutes. Brush with hot honey and continue baking until honey is carmelized and bacon is crispy. We like extra crispy!Transfer to a paper towl lined plate to drain.
In a medium bowl combine the cream cheese, scollions and jalapenos. Seaons wioth salt and pepper to taste. I toasted our bagels first, then spread the pre-packed cream cheese spread and sprinkled with jalapenos.
In a small to medium bowl, beat eggs until blended. In a medium skillet over medium heat, melt butter until foamy. Add the eggs and I scrambled our eggs. I also used more salt and pepper to taste and added some chopped jalapenos. Cook for about 5 min. You can also do a thin layer of egg too. A little less cooking time for that.
Top the eggs with cheese and reduce heat to low and cover. Cook until the cheese is just melted.
Divide the eggs and bacon among the 4 bagel halves. Top with a little hor honey (or a lot!) abd hot saucve if you like. Top with the bagel top and enjoy!
