Chicken Fajita Foil Packet Recipe

Ingredients

  • 4 Boneless Chicken Breast, trimmed and sliced
  • 1 cup White Rice *I used Jasmine Rice
  • 2 cups Water
  • 1/4 cup Chopped Fresh Cilantro
  • Black Pepper, to taste
  • 1 tbsp Fresh Lime Juice
  • 1 packet Fajita Seasoning Mix
  • 1 Red Pepper, sliced
  • 1 Yellow Pepper, sliced
  • 1 Orange Pepper, sliced
  • 1/2 Onion, sliced
  • 2 tbsp Olive Oil
  • 1 can Black Beans, rinsed
  • 1 can Diced Tomatoes with Green Chiles
  • 8 Tortillas
  • 1/2 cup Shredded Cheddar Cheese
  • 1 Avocado, diced

Instructions

  • Preheat oven to 400 degrees. 
    Place 4 pieces of foil on a large baking dish.  Be sure to make them 6-8 inches wide spray with non-stick cooking spray.
  • Combine rice and water in a bowl.  Cook in the microwave according to directions.  Once cooked add lime juice, pepper (to taste) and cilantro.  Set aside.
  • Slice all peppers, onions and chicken.  Once everything is prepped place in a bowl with olive oil and fajita seasonings.  Combine until thoroughly coated.
  • Layer the ingredients on the tin foil in equal parts.  Place rice on the bottom, chicken/pepper mixture on top, black beans on either side. 
  • Fold up the sides and seal the top so they look like "packets".   Bake for 35-40 minutes and serve tortillas, shredded cheese and sour cream if desired!
