Ingredients
16 ozZiti or Rigatoni Pasta*or whatever pasta type you like!
14ozAndouille Sausage
2-3Boneless Chicken Breast, cubed
4tbspButter
1smallYellow Onion, thinly sliced
1Red Bell Pepper, seeded and thinly sliced
5tspCajun Seasoning
2tspBrown Sugar
2tspMinced Garlic
14ozCrushed Tomatoes
1cupChicken Broth
1cupHeavy Cream
3/4cupShredded Parmesan Cheese
1BundleGreen Onions*optional, for garnish only
Instructions
Cook pasta according to the directions on the box.
While the pasta cooks, melt 2 tbsp of butter in a large pan. Add cubed chicken and sliced sausage. Cook for 5-7 minutes. Transfer to a bowl when done cooking. Set aside.
Melt another 2 tbsp of butter in large pan. Add sliced red pepper, onion and minced garlic. Saute for 5 minutes until softened.
Add Cajun seasoning, brown sugar, crushed tomatoes, chicken broth and heavy cream. Cook until heated through. Then add the shredded Parmesan cheese and cook until melted and simmering.
Once simmering, add cooked pasta, chicken and sausage. Cook until heated through and serve! Garnish with chopped green onions and enjoy!
