In a large frying pan over high heat, pour olive oil in the center of pan. Add onions and garlic and cook for 1-2 minutes. Then add peppers and tomatoes.
Once most of the liquid from the tomatoes evaporates, add chicken, honey and cilantro. Mix until thoroughly combined. Reduce heat to low.
In a separate frying pan, over high heat, spray with nonstick cooking spray. Once hot, lay a tortilla on the pan and cook slightly until warm, not crispy. Then add chicken filling to one side of the tortilla and 2/3 cup of shredded cheese on top.
Fold the other half of the tortilla over the cheese and chicken mixture. Cook until the tortilla is crisp and golden. Then flip to the other side and cook until crisp and golden.
Repeat with remaining tortillas and mixture.
Garnish with sour cream, guacamole, diced tomatoes and fresh cilantro! Then enjoy!
