Preheat oven to 350 degrees
Mix flour, baking soda and salt in a small bowl and set aside.
Using a hand beater or mixer, mix together both sugars and butter. Once thoroughly mixed add the eggs and vanilla. Mix until fluffy.
Slowly add the flour mixture and oats, a little at a time. Mixing in between so all ingredients are thoroughly combined. Then add the chips and nuts.
Using a small scoop, place the cookie mounds onto a baking stone. I love baking stones and have found they give an even baking surface for everything from cookies to pizza.
Place in the oven for 9-12 minutes. If you like chewier cookies, bake for 9 minutes. If you like them a little crispier, then longer. Let the cookies "rest" on the stone for 5 minutes before transferring to a cooling rack. Once cooled, enjoy!
