Slow Cooker Chicken and Dumplings

Here is an easy slow cooker chicken and dumplings recipe for one of my favorite comfort foods!  A tasty and healthier version than the Campbell soup version!

Equipment

Ingredients

  • 3 Boneless Chicken Breast
  • 1/2 Medium Onion, chopped
  • 2 Carrots, peeled and chopped
  • 2 Stalks of celery, sliced
  • 1 tbsp Minced Roasted Garlic
  • Salt and Pepper to taste
  • 2 32 oz Boxes of Low Sodium Chicken Broth
  • 1 can Pillsbury Biscuits
  • 1 12 oz jar Heinz Chicken Gravy optional, only if you want a thicker broth
  • 1/2 cup Flour I dip the biscuits pieces in the flour to thicken the broth

Instructions

  • Prepare the onion, carrots and celery as directed above.  I use a quick manual chopper for a quick prep time!  Place them evenly across the bottom of the slow cooker.
  • After rinsing the chicken breast, place them on the top of the chopped veggies.  Sprinkle spices and garlic evenly over the chicken.  You can use poultry seasoning in place of the organic spice blend I use.  Grind sea salt and pepper to taste. 
  • Pour chicken broth and gravy over the other ingredients and cook on low for 8 hours. Or high for 4 hours.
  • 1-1.5 hours prior to serving.  Cut biscuits into 4 pieces each and dip in flour.  Carefully place them in the slow cooker and cook.  The biscuits can take up to 1.5 hours to cook, depending on the slow cooker.  The slow cooker I have is amazing and has a ton of cooking options!
  • When done, shred the chicken and return to the slow cooker.  Then mix well and enjoy!!!!
