Slow Cooker Chicken Burrito Bowl

Ingredients

  • 3 pieces Boneless Chicken Breast can be thawed or frozen
  • 2 cans Chicken Broth
  • 3 cans Diced Fire Roasted Tomatoes with Green Chiles you can use either the green chiles or garlic
  • 2 cans Black Beans, rinsed and drained
  • 1 bag Frozen Sweet Corn
  • 1 cup Long Grain or Brown Rice
  • 1 tbsp Red Chili Pepper Feel free to use a packet of taco seasoning instead of red chili pepper & garlic
  • 1 tbsp Crushed or Minced Garlic
  • 1 Lime, just the juice of the lime
  • Fresh Cilantro, for garnishment
  • Burrito Size Tortillas (optional)
  • Sour Cream (optional garnishment)
  • Guacamole (optional garnishment)

Instructions

  • Layer the following ingreidents in order:  Chicken in one layer on the bottom, chicken broth, red chili pepper, garlic, diced tomatoes, bleack beans, frozen corn on top.
  • Cook on low for 4 hours.  Pour rice into slow cooker and mix in after it has cooked for 4 hours. Then cook for another 3 hours on low.  If you are not home to put rice in slow cooker, cook seperately on stove top and mix in later!
  • Once cooking has been completed, remove chicken breasts and shred.  Then put back in the slow cooker and mix thoroughly!  Squeeze juice of lime over the top and garnish with fresh cilantro!  Enjoy!!!
