Slow Cooker Chicken Corn Chowder

Ingredients

  • 2 Boneless Chicken Breast *can be cooked from frozen too
  • 2 cups Chicken Broth
  • 2 cups Heavy Cream
  • 2 bags Frozen Corn Kernels *I used Birds Eye
  • 2 cans Cream Style Corn *14.75 oz each
  • 8 slices Bacon, cooked and chopped
  • 2 tbsp Minced Garlic
  • 2 tbsp Paprika *extra for garnish
  • 1/2 Small Onion, chopped
  • Salt/Pepper *to taste
  • 1/4 cup Green Onion, chopped *extra for garnish
  • 6 Petite Yellow Yukon Potatoes *cut into bite size pieces

Instructions

  • Add chicken broth, heavy cream, chopped onion, garlic, bacon, both frozen and canned corn, paprika, salt/pepper.  Mix to combine.  Place chicken in the slow cooker and let it sink to the bottom.
  • Set on high for 4-5 hours.
  • Add potatoes and chopped green onions after cooking for 3 hours.  At the same time, pull out chicken breast and shredded with 2 forks.  Place back in the slow cooker and mix well.  Cook for another 1 hour.
  • Serve hot.  When serving you can garnish with either bacon bits, chopped green onion or a sprinkle of paprika! Then enjoy!
