Summer Peach and Chicken Salad

This is a delicious and creative salad that will make your taste buds beg for more!

Ingredients

  • 1 Rotisserie Chicken *or 2 cooked and shredded boneless chicken breast
  • 2 Peaches, sliced and skin removed
  • 1/2 cup Dried Cherries, chopped
  • 6 cups Baby Kale
  • 1/2 cup Chopped Purple Onion
  • 1/2 cup Crumbled Feta Cheese
  • 1/4 cup Shredded Fresh Basil
  • Candied Walnuts or Pecans
  • 1 bottle Briannas Blueberry Balsamic Vinaigrette *or you can make your own

Instructions

  • Any ingredients that need to be chopped, diced or sliced are prepped and ready to go prior to cooking your peaches!
  • Place a pan with either a small amount of coconut oil or canola oil in a medium size pan on medium heat. Once pan is hot, place peaches in the pan. Cook for 3-4 minutes on either side and then add shredded chicken and cook for another 4 minutes or until both peaches and chicken are hot. Remove from heat.
  • To assemble your salads pull out 4 bowls or plates. Divide all the ingredients evenly evenly between the 4 serving dishes. Baby kale is on the bottom and then you can layer the remaining ingredients as follows: chicken and peaches, purple onion, chopped dried cherries, feta cheese crumbles, basil strips and then the candied walnuts. There is no right or wrong on how you layer your salad with the ingredients!
  • I leave the bottle of dressing on the table so everyone can add the amount of dressing they desire.
