Ingredients
1Rotisserie Chicken*or 2 cooked and shredded boneless chicken breast
2Peaches, sliced and skin removed
1/2cupDried Cherries, chopped
6cupsBaby Kale
1/2cupChopped Purple Onion
1/2cupCrumbled Feta Cheese
1/4cupShredded Fresh Basil
Candied Walnuts or Pecans
1bottleBriannas Blueberry Balsamic Vinaigrette*or you can make your own
Instructions
Any ingredients that need to be chopped, diced or sliced are prepped and ready to go prior to cooking your peaches!
Place a pan with either a small amount of coconut oil or canola oil in a medium size pan on medium heat. Once pan is hot, place peaches in the pan. Cook for 3-4 minutes on either side and then add shredded chicken and cook for another 4 minutes or until both peaches and chicken are hot. Remove from heat.
To assemble your salads pull out 4 bowls or plates. Divide all the ingredients evenly evenly between the 4 serving dishes. Baby kale is on the bottom and then you can layer the remaining ingredients as follows: chicken and peaches, purple onion, chopped dried cherries, feta cheese crumbles, basil strips and then the candied walnuts. There is no right or wrong on how you layer your salad with the ingredients!
I leave the bottle of dressing on the table so everyone can add the amount of dressing they desire.
