Taco Zucchini Boats

To help reduce your carb intake, this is a great recipe that substitutes the zucchini as the taco shell or tortilla!

Ingredients

  • 5 Zucchini
  • 1 lb Lean Ground Beef
  • 1 14 oz can Black Beans (drained and rinsed)
  • 1 14 oz can Sweet Corn Kernels (drained)
  • 1 tbsp Chili Powder if you want spicier then add more!
  • 1 tbsp Legendary Spice Lava Blend see link to purchase this fabulous organic spice blend!
  • 1 14 oz can Fire Roasted Diced Tomatoes with Jalapenos
  • 1-2 cloves Garlic
  • 1/2 cup Diced Yellow Onion
  • 1 cup Shredded Mexican Blend Cheese or Sharp Cheddar
  • 1 Avacado
  • 1/2 cup Sour Cream
  • Salsa

Instructions

  • Heat over to 350 degrees.
  • Cook the garlic and onion until tender. Add the ground beef until there is no pink. Drain off any fat and add the chili powder, Lava spice blend, diced tomatoes, black beans and corn. Mix thoroughly.
  • While cooking the meat mixture, slice the zucchini length wise, in half. Use a small scoop to remove the center and "hollow out" the zucchini. So that it acts as a "boat".

  • When meat mixture is evenly blended, fill each zucchini "boat" the meat mixture. Top with shredded cheese and bake for 25 minutes.

  • When fully cooked, you can add your own toppings! We used sour cream, diced avocado and salsa! Then enjoy! This is a healthy alternative that everyone will love!
