Tuscan Style Pasta Recipe

This is an easy weekend night meal that has a ton of flavor and is ready in a bout 30 minutes! Serve with a salad and warm crusty bread!
Servings 4 servings

Ingredients

  • 8 oz Linguine *cook according to package
  • 1 lb Sweet Italian Sausage
  • 1 tbsp Minced Garlic
  • 1 tbsp Italian Seasoning
  • 8.5 oz jar Sun Dried Tomatoes *I bought julienne cut
  • cup Mascarpone Cheese
  • ¼ cup Shredded Parmesan Cheese *extra for garnish
  • 1 cup 2% Milk *for a creamier/thicker sauce use heavy cream or half and half.
  • 2 cups Shredded Spinach
  • ½ cup Hot Pasta Water
  • 1 tsp Red Pepper Flakes *or to taste. This is optional.

Instructions

  • Cook pasta according to the package.
  • Over medium heat, cook and crumble sausage until there is no pink. Drain excess fat.
  • Add minced garlic and cook until fragrant, about 5 minutes. Remove from heat and set aside.
  • Drain sun dried tomatoes of oil. Add to a food processor, and chop until liquefied. Add mascarpone cheese, Italian seasoning, red pepper seasoning and blend until smooth. Mixture will have a thick consistency.
  • Add sun dried mixture to sausage and garlic. Place over medium heat and stir occasionally until heated through. Add milk and hot pasta water. Continue to stir until all ingredients are thoroughly blended and hot. Add chopped spinach and cover until it is wilted. Approximately 5-10 minutes. Combine pasta and Parmesan cheese and serve! Garnish with fresh basil and more shredded cheese!
