This is an easy weekend night meal that has a ton of flavor and is ready in a bout 30 minutes! Serve with a salad and warm crusty bread!

Ingredients
8ozLinguine*cook according to package
1lbSweet Italian Sausage
1tbspMinced Garlic
1tbspItalian Seasoning
8.5 ozjarSun Dried Tomatoes*I bought julienne cut
⅓cupMascarpone Cheese
¼cupShredded Parmesan Cheese*extra for garnish
1cup2% Milk*for a creamier/thicker sauce use heavy cream or half and half.
2cupsShredded Spinach
½cupHot Pasta Water
1tspRed Pepper Flakes*or to taste. This is optional.
Instructions
Cook pasta according to the package.
Over medium heat, cook and crumble sausage until there is no pink. Drain excess fat.
Add minced garlic and cook until fragrant, about 5 minutes. Remove from heat and set aside.
Drain sun dried tomatoes of oil. Add to a food processor, and chop until liquefied. Add mascarpone cheese, Italian seasoning, red pepper seasoning and blend until smooth. Mixture will have a thick consistency.
Add sun dried mixture to sausage and garlic. Place over medium heat and stir occasionally until heated through. Add milk and hot pasta water. Continue to stir until all ingredients are thoroughly blended and hot. Add chopped spinach and cover until it is wilted. Approximately 5-10 minutes. Combine pasta and Parmesan cheese and serve! Garnish with fresh basil and more shredded cheese!
